煎堆是傳統油炸的食品,以炸起糯米團和白芝麻做外皮,内軟外脆內,有些包有豆沙,蓮蓉,麻蓉等等做餡料,亦是過年見食品,寓意 「煎堆轆轆,金銀滿屋 」。

榛子醬棉花糖煎堆食譜
材料:
糯米粉 200g
熱水 150g
低筋麵粉 1tbsp
菜油 1tbsp
糖 45g
泡打粉 1tsp

做法:
- 將 100g 糯米粉和熱水攪拌均勻。
- 加入剩餘糯米粉,低筋麵粉,泡打粉,糖和菜油搓成麵團,用濕布蓋住等待麵團鬆弛10 分鐘。
- 將麵團分割成36g 小麵團,壓扁,包入榛子醬和棉花糖,揑緊役收口,搓成圓形。
- 將 步驟(3)小麵團沾水,再均匀沾上白芝麻。
- 鍋中放入油加熱,放入小麵團用小火炸5 分鐘,再改用中火炸5分鐘或至金黃色即可。(注意油溫不要太高,炸時要不斷推動或輕輕按下粉團,粉團就會膨脹起來)
Fusion Fried Glutinous Rice Dumplings with Sesame Seeds
Ingredients:
Glutinous Rice Flour 200g
Boiling Water 150g
All Purpose Flour 1tbsp
Vegetable Oil 1tbsp
Sugar 45g
Baking Powder 1tsp
Nutella
Marshmallows
Sesame Seeds
Direction:
- Mix 100g of glutinous rice four with boiling water.
- Put the remaining glutinous rice flour, all purpose flour, baking powder, sugar and vegetable oil into the mixture of flour and water (step 1), then knead it for 5 minutes and cover the dough with cling film or a damp towel and rest for 10 minutes.
- Take a small amount of dough (36g), roll it into a ball and slightly flatten it, then put Nutella and marshmallows in the middle of the dough and seal the edges and roll it into a ball shape again.
- Dip the dough ball (step 3) into water, then coat it with white sesame seeds thoroughly.
- Put the dough ball into preheat oil at 80C and fry it for 5 minutes, then turn the heat up to 170C and fry for another 5 minutes. (Do not fry the dough ball at high temperature as the dough ball will be burnt and uncooked. Also while frying the dough ball, you need to use a ladle to stir the oil several times at a few minutes interval to enable the dough balls to raise bigger)
